Cuvée « Les Petits Amants »
Soil : The grapes were grown in the vineyards located on the slopes of Gard (pebble soils, climate tempered by the proximity of the sea), and the Biterrois coast (clay-limestone soils, warm Mediterranean climate). Size and yield are controlled, these being reduced by around 30% compared to conventional viticulture.
Elaboration :The grapes are harvested at perfect maturity, early in the morning. Once destemmed, they then macerate for 15 days to 3 weeks in vats. Alcoholic fermentation takes place with temperature control. The pumping over is regular. Malolactic fermentation takes place in vats.
